Usually fixed width templates are optimized to fit on a 1024 by 768 pixel resolution. Generally the template width would 1000px - that gives you a few pixels leeway for the scroll bar in the browser.

However, many people who have larger resolutions like 1440 by 900 pixel resolution tend to dislike a fixed width template because 440 pixels are unused. To what many people do is set their template width to a percentage. Generally I use a 90% width for my templates main table / div.

I agree with Sidewinder. A variable width is better for people with larger resolutions. Fixed width = suck

I think fixed widths generally look better for the res they were made for.
