Do you know what they stand for? I am sure learning what they are and coming up with your own differences could certainly form a more cement understanding.

Yes, I know my problem is SOAP and XML are they EDI or API?

A definition of EDI will certainly give you the answer (it is very unique from API)

EDI is between two or more organization but API is between two software?
What about SOAP?

SOAP is simple object access protocol, and XML is a markup language. They are not APIs, although APIs are often used to access them, as XML or SOAP functionality is often not build in to any language.
