I have a question about Ubuntu Desktop and Ubuntu Server editions. Does the server edition offer Ubuntu desktop(trimmed down for less memory usage obviously) features such as multiple user logon, Firefox and those other gui features. I am planning to format my other desktop computer and install Ubuntu Server on it so I can run web servers. However my 8yr old brother is also a user of this computer and I don't want it to be just a black console box/shell. Sorry If I am incredibly nooblike on this topic.

You will need to manually install a graphical interface, I believe with Ubuntu this is done by upgrading the system fully, then just running a few apt-get commands to install Gnome/KDE/XFCE window managers.
If it a personal server, and you have more than 512 megabytes of RAM (disabling advanced graphics like Compiz), the desktop edition should be fine for you unless you really want to start over.
