If I'm coding in Linux I'm using Eclipse or Aptana, on Windows I'm using Eclipse or Aptana, on Mac I'm using Coda, CSSEdit or Stylizer, and TextMate. I use MultiFirefox on the Mac to run multiple versions of FF and test them concurrently.
I think anything else I might suggest has been mentioned. That said, I haven't got my Subversion server working right just yet, though I plan to work with TortoiseSVN (Windows) and Versions (Mac) as soon as I do!
