Lib to use when dealing with images

What lib would give me the ability to deal with images. What I have in mind is eventually being able to desaturate an image, but as a way to get acquainted, I just want to create a grid of randomly colored pixels.

What library are you using for GUI work in general? wxWidgets, Ultimate++, and GTK+/gtkmm are all options for C++, but each is quite different from the others.
