how to overwrite a os of a hardware?

Hi all I have a question guys, I was wondering if is possible to overwrite an existing os of a hardware?

I mean I have a hardware sampler to make music but the system is out of date i mean is old and useles for modern music making but im not buying the new ones since is almost the same and very expensive and i like my machine still i mean the hardware not the soft in it.

if is possible to write your own os with your own functions and overwrite it over the one that the hardware alredy has?

I was wondering if first:
the possibility to break the code meaning to get the firmware of the os that is in the hardware so i can just maybe add functionalities i need, like add new features or to be able to read a modern hard disk.

or the other option is maybe tu build the os from scratch and just use the rom to store the new os ?

in this machine is easy to update the os from a floppy but that`s the one from the company is possible to do that with your own os???

any ideas?? suggestions?? what you think is possible to do?? how?
