What services do you not need for a webserver? I see a lot running but am unsure which to disable.

Here are a few:
auth, finger, echo, chat services (CPanel only).

You may also want to deny usage to these:
. /usr/kerberos/bin/ftp
. /usr/bin/elinks
. /usr/bin/links
. /usr/bin/lynx
. /usr/bin/rcp
. /usr/bin/wget
. /usr/bin/scp

You may also want to install chkRootKit.
